Tangelo Cilantro Chicken & Sweet Potato Fries

Looks like summer time ☀️ on my plate tonight! Loving this warm weather and this light, colorful dinner seems to be the perfect complement to my evening😊 I used tangelos because I am partial to them, I love the deep orange color and rich flavor, but you can use oranges and get a similar outcome.
Marinade
🔹juice of 1/2 tangeloIMG_3288
🔹zest from 1/2 tangelo
🔹1/4cup cilantro, chopped
🔹3tbsp soy sauce
🔹1 clove garlic, minced
🔹1″ thumb ginger, minced
🔹1tsp ground black pepper
Spice Mix

🔹1tsp salt
🔹1tsp garlic powder
🔹1tsp ginger
🔹pepper to taste
🔹zest from 1/2 tangelo
🔹1/4 chopped fresh cilantro
Mix dry spices, rub on chicken before baking, then sprinkle cilantro and orange zest on topside of chicken.

Sweet Potato Fries
🔹Slice 1cm thick fries from sweet potato and put on baking sheet. Spray or drizzle fries with olive oil, salt & cayenne then mix with hands. Doesn’t have to be perfect!  Distribute fries so they aren’t touching- this will allow them to crisp up.
Directions
1. Marinate chicken for 30min.
2. Set convection oven to 400deg
3. Prep fries (see above👆)
4. Remove chicken from marinade and add spice mix to both sides. Slice the other 1/2 tangelo into thin pieces. Put chicken in baking dish, add orange slices on top and pour marinade around it.
5. Put fries on baking sheet, make sure they’re not touching.
6. Bake for 30min
