Ingredients
2 cups corn (fresh, frozen or canned & rinsed)
4 avocados, diced
2 cans diced tomatoes, drained (with cilantro if you can find it!)
2 cans low sodium black beans, rinsed
4 garlic cloves, minced
1/4 red onion, minced
2 jalapenos, minced
1/2 cup cilantro, mined
1 lime, juiced
Mix all ingredients together and season with salt and pepper. Add salt and pepper if desired. Serve with whole grain chips. Makes about 8 servings.
