I love oven baked Kale Chips, but other than that I have a hard time getting kale into my diet. Thats why I was so surprised when I could not stop picking at this kale salad! And I knew I had to share the recipe with you guys.
Soaking this tough veggie in the apple cider vinegar marinade makes it more tender and in my opinion, more palatable. It’s quick, easy, very very healthy and delicious which makes it the perfect homemade meal!
🔹4-5 stalks kale, ripped into bite size pieces
🔹1/2cup *blue cheese crumbles
🔹1/2 cup chopped walnuts
🔹1/2cup diced apple chunks
🔹1/4cup chopped green onion
🔹2tbsp apple cider vinegar
🔹1/2 squeezed lemon
🔹Salt and pepper to taste
1. Pour dressing over kale, mix and let sit in fridge for 30min or overnight
2. Add all other ingredients right before serving
3. Garnish with sesame seeds
*For more variations of this salad, use goat cheese in place of the blue cheese and avocado for a yummy vegan version too. Ive also used dried fruit like apricots, dates or dried cherries in place of the apple chunks and its amazing any way I dress it up. Use what you have on hand and don’t feel like you have to follow this recipe exactly. Mix it up however you please!
