Whats for Dinner? Paleo Sweet Potato & Buffalo Chicken Bake

I feel like we’re all consistently scrounging around for new dinner ideas so when I came across this one, made it and satisfyingly tasked how delicious it was (I feel like so many ‘healthy’ dinner recipes I try are just blah, no good!) I knew I had to share it with you guys.  It is SPICY so don’t say I didn’t warn those of you who don’t like to pack a peppery punch into their meals.  But if you just cut back on the amount of hot sauce you use you’ll easily make a milder version.  The rest of us can get our tissues ready and eat on!!  This meal is packed with nutrients, protein, vitamins, fiber, healthy fats and spices that aid in digestion.  So enjoy this homemade healthy meal!

*I put 1/2 a sweet potato wrapped in foil and part of the breaded chicken breast w/o spicy sauce in the oven for my toddler while the main dish cooked.  Super easy and good thing since we all know kids don’t do spicy;)
