Last Minute Dinner

We’re snowed in so I rummaged through my cabinets and fridge in search of something decent to serve for dinner.  Here’s what I pulled out…

ginger, green onion, shallot, parsley, lemon, grapefruit, strawberries, brussel sprouts, quinoa, sunflower seeds, chia seeds & sesame seeds

And here’s what I did with it…

Sesame & Chia Seed Tilapia spiced with turmeric and curry, ginger & lemon Brussels Sprouts, nutty Quinoa with green onion & spice and finally, sliced grapefruit and strawberries

Don’t be afraid of working with what you’ve got!  Take inventory of what you have then mix it up and make a dinner happen, sister!  If you’re still timid and afraid of letting your creative culinary side go then follow these essential tips for a delicious and complete meal every time you cook…

Last Minute Meal Guide

Pick a…

  1. meat
  2. green veggie
  3. carb
  4. healthy fat (usually an oil or avocado, artichoke or any other fatty veggie will do)

Now add one or more of each…

  1. spice (ginger, cinnamon, curry, turmeric, cumin, black pepper)
  2. herb (preferably fresh, cilantro, rosemary, thyme, oregano)
  3. citrus (lemon, grapefruit, lime, orange)
  4. oil (canola, coconut, olive, sesame)
