What’s for Dinner? Thai Shrimp Curry

Thai Shrimp Green Curry

We LOVE this recipe.  Its a metabolism boosting, cleansing, protein and nutrient packed meal that tastes incredibly indulgent too.  Modify it however you please and ENJOY!

*makes approx 4 servings


-1Tbsp coconut oil

-1cup thinly sliced onion

-1 stock bok choy

-1cup chopped green onions

-2Tbsp Thai green curry paste

-1, 14oz can lite unsweetened coconut milk

-1/2cup low sodium chicken broth

-2Tbsp Thai fish sauce

-1 cup diced plum tomatoes

-1/2-1lb uncooked large shrimp, peeled, deveined

-chopped cilantro

-lime wedges

-instant vermicelli noodles


Heat oil in large skillet over med heat.  Add onion and bok choy, stir fry until brown, about 4min.  Add green onions and curry paste, stir for about 1min.  Add coconut milk, chicken broth, fish sauce; bring to boil.  Add tomatoes and boil for 2min.  Add shrimp and cook until opaque in center stirring often, about 3min,

Serve over instant vermicelli noodles.  Let stand for 3min to allow noodles to cook/soften.  Garnish with cilantro and lime wedges.
